In the field of journalism, she discovered the accessibility of radio, which naturally led her to the world of podcasting. She eventually created her own podcast, Cooking the Books, which won The Guild of Food Writers' Food Broadcast or Podcast Award in 2022.

Gilly has also produced popular shows such as Leon’s How to Eat to Save the Planet, Philip Lymbery’s The Big Table, and Borough Market’s podcast. As a prolific author, she has written over a dozen books, including Taste and the TV Chef, How to Start and Grow a Successful Podcast, and the biographies of Nigella Lawson and Jamie Oliver. In addition, she hosts training sessions and retreats on podcasting to help others find and share their voice.
